Ingredients for 2:

  • 2 zucchini
  • 200 g smoked salmon
  • 1 onion
  • 1 clove of garlic
  • a hand full of rucola
  • 50 ml cooking cream light
  • 1 tablespoon Parmesan cheese
  • 1 tablespoon chives
  • salt and pepper to taste
  • Oliveoil for baking
  • lime


Clean the zucchini and use a spirelli cutter to cut nice thin streaks of the zucchini. Set aside the courgetti.
2. Chop the onion and heat a little olive oil in a pan. Fry the onion briefly, squeeze out the garlic and fry it too.
3. Add the cooking cream and add the parmesan cheese and some pepper and salt to taste. Heat and stir the cream sauce well until the sauce thickens.
4. Add the courgetti and stir in the cream sauce until the zucchini is warm. (Not too long, otherwise it will be very watery!)
5. Spread the creamy courgetti over two plates.
6. Cut the smoked salmon in thin slices and divide them over the courgetti.
7. Finally, spread some lime, chives and Parmesan cheese over the plates and your creamy courgetti with smoked salmon is ready to eat!
