This recipe for cauliflower frittata is very simple! With leftover cauliflower rice from last night and an egg you make a healthy and delicious Low Carb lunch, as diner with salad or just enjoy it as a healthy snack.
You can make them even healthier by adding vegetables.

Ingredients for cauliflower frittata:

• 150 grams of cauliflower rice
• Two eggs
• Chives
• Italian spices
• Sea Salt and pepper


1. Mix all ingredients thoroughly.
2. Melt olive oil in a frying pan and pour the mixture into the pan. Cover with a lid and let it warm up for about 5 minutes on medium heat.
3. Turn the cauliflower frittata and bake for 2 minutes.
4. Serve warm and enjoy!
